Sweet Potato Breakfast Hash

As a chef with type 1 diabetes, I am always looking for dishes that are an “all-in-one” flavor kind of meal for breakfast. This breakfast hash dish builds its foundation on simple Latin flavors and a base of sweet potatoes which are my favorite complex carb. This is also a great meal prep dish that can be reheated and enjoyed days after making. Based on how you’re feeling that day add a dash of any of your favorite sauces or condiments to add a little variety to this fantastic breakfast meal.

This hash is a great way to start the day but can also be an accompaniment to lunch or dinner. Be creative and add whatever protein of your choice. Enjoy!

Ingredients

  • 1 tbsp. extra virgin olive oil
  • 1.5 cups sweet potato medium-diced
  • 2 bell peppers chopped
  • 1/2 sweet onion large, chopped
  • 1/2 lb. turkey bacon sliced or cooked and broken into bits
  • 1/4 cup cilantro chopped
  • 1/4 cup green onion chopped
  • 1 tsp. cayenne
  • 1 tbsp. paprika
  • 4 eggs
  • 2 tbsp. butter unsalted
  • salt and pepper to taste
  • tomatillo sauce to taste
  • sriracha to taste
  • cotija cheese or shredded cheese, to taste

Instructions

  • Get cast iron or sauté pan with oil hot and add oil potatoes and cook for 3-5 minutes until brown.
  • Add peppers, onions and seasonings and sauté for another 3 to 5 minutes until hash is cooked through and adjust seasoning.
  • Place hash at bottom of small cast iron skillet or bowl.
  • Cook 2 eggs over easy or however desired and top hash with eggs, and sliced or cooked Turkey bacon bits.
  • Garnish with green onions, cilantro, tomatillo sauce, sriracha, and cojita cheese.
